Food-grade calcium carbonate (CaCO3) is a fine, white, odourless powder derived from natural mineral sources such as limestone or marble. It is one of the most concentrated sources of elemental calcium, containing approximately 40% calcium by weight, which is significantly higher than calcium citrate (21%) or calcium lactate (13%).
Key Applications in Food Manufacturing
Mineral Fortification
Calcium carbonate is the primary fortification ingredient in plant-based beverages (oat milk, almond milk, soy milk), orange juice, cereals, and breads. Health Canada requires that many fortified foods use specific calcium sources, and calcium carbonate is the most commonly approved option due to its high elemental calcium content and low cost.
pH Adjustment and Buffering
As a mild alkaline agent, calcium carbonate is used to adjust pH in food processing. It neutralizes excess acidity in fruit products, dairy processing, and confectionery. Unlike sodium bicarbonate, it does not add sodium to the formulation, which is an advantage for reduced-sodium products.
Tablet and Supplement Manufacturing
Calcium carbonate is the most popular form of calcium in tablet supplements. Its high elemental calcium percentage means fewer or smaller tablets per serving. It is also used as a filler and flow agent in tablet compression, combined with ingredients like microcrystalline cellulose.
Anti-Caking Agent
In powdered food products, calcium carbonate prevents clumping and improves flowability. It is commonly added to spice blends, baking mixes, and powdered drink mixes at concentrations of 1-2%.
Colour and Opacity
Calcium carbonate provides natural white colour and opacity in confectionery coatings, chewing gum, and certain dairy products. It is a clean-label alternative to titanium dioxide in many applications.
Specifications to Look For
When sourcing food-grade calcium carbonate, verify the following specifications:
- Purity: minimum 98% CaCO3
- Heavy metals: lead less than 3 ppm, arsenic less than 3 ppm, mercury less than 1 ppm
- Mesh size: typically 200-325 mesh for food applications (finer grades for supplements)
- Moisture: less than 1%
- Microbial limits: total plate count less than 1,000 CFU/g, yeast and mould less than 100 CFU/g
Calcium Carbonate vs Other Calcium Sources
- vs Calcium Citrate: citrate has better absorption on an empty stomach, but carbonate provides more elemental calcium per gram and is more cost-effective. Carbonate requires stomach acid for absorption and is best taken with meals.
- vs Calcium Lactate: lactate is highly soluble and ideal for clear beverages, but has much lower elemental calcium (13%). Carbonate is better for opaque products and tablets.
Storage and Handling
Store in a cool, dry area away from acids and moisture. Calcium carbonate is hygroscopic at high humidity levels. Keep containers sealed when not in use. Shelf life is typically 36 months when stored properly.
