- Heat and pH: inulin hydrolyzes under prolonged heat in acidic conditions, which reduces its fibre content. For acidic beverages, minimize hot-hold times.
- Solubility: disperses and dissolves in warm water; density in solution is approximately 1.10–2.05 g/ml at 25°C depending on concentration.
