What is the base sour coating recipe and what ratios should you use?

A sour coating is simply a dry blend of acid and sugar tumbled onto a slightly tacky candy surface. The universal starting point:

The 50/50 starting blend

  • 50% fine granulated sugar (or castor/superfine sugar for better adhesion)
  • 50% citric acid, fine granulation

Dialing intensity up or down

  • Mild tang: 25% acid / 75% sugar.
  • Standard sour: 40–50% acid.

Granulation matters

Reduced-sugar coatings

  • Rebalance the blend. Reduce malic (the most hygroscopic) and shift toward citric and tartaric if weeping persists.
  • Consider encapsulation. Commercially, encapsulated acids — acid particles coated in a lipid barrier — are used to isolate the acid from moisture. Even without true encapsulation, a light dusting of the sugar phase applied after the acid layer acts as a conceptual buffer.
  • Control storage. Airtight containers, desiccant packs and a cool, dry room below roughly 50% relative humidity make more difference than any recipe change.

Caking and clumping in the blend

If your acid-sugar blend sets into lumps in the bin, moisture got in. Keep bulk acids sealed, scoop with dry utensils only, break lumps through a sieve before use, and blend only what you will use within a few days. Uneven sourness between batches

Almost always a mixing problem. Pre-blend the acids together before adding sugar, mix at least twice as long as feels necessary, and store the finished blend in a sealed container that you re-tumble before each use.
